Okra and Tomatoes on Rice

Ok don’t say I didn’t warn you but you seriously got to be careful with this recipe! If you don’t make enough of this stuff you will end up fighting over that last few drops of some of the worst looking stuff you have ever laid eyes on! Sound appetizing? I thought so…
First things first, I generally don’t measure things very carefully I tend to cook with broad strokes… so don’t stress out about quantities… just make sure you are in the ball park and you should be fine!
What you will need
- Some oil, I prefer Olive oil
- A bag of cut Okra (The more the better , but a pound or two is good)
- A can of Diced or stewed tomatoes (two if you have alot of okra)
- An onion (“oyio”… I say this every time I grab an onion… don’t know why)
- A whole head of garlic (yes I know its alot… but garlic is great!)
- a bell pepper
- enough rice to feed an army
First start your rice… if you have no idea how to cook rice… get a rice cooker, it will save you a lot of trouble… If you still do not know how to cook rice… go read some other part of my blog , this section is probably not your cup ‘O Tea!
Once your rice is cooking, chop up the onion and bellpepper… basically just dice everything into decent chunks… peel and dice the garlic and open the can of tomatoes. Put enough oil in a large skillet to coat the bottom generously. This skillet should be positively huge… big enough to dump everything in and still have room to stir. Put the heat on medium high and let the oil get hot, then dump in the okra into the hot oil… and let it cook…
this part is VERY VERY important… you have to cook the okra down until it looks like something you scraped off your boot. I am not joking about this! just stir it, if it dries out add some water, keep scraping it off the bottom of the pot. You can’t really over cook okra as long as it has some moisture… so if it still looks like okra then it aint done! just add a little water and keep cooking it! ( I like to turn up the heat and scorch it pretty good so that it gets nice and burnt looking.)
Once you are convinced the okra cannot possibly be cooked any longer and it looks absolutely disgusting dump in the rest of the diced vegetables, put a lid on the skillet, put the heat on medium and let it simmer… check it every once in a while to stir and add water if it seems to be getting a little dried out.. you want the consistency to be a little like a chunky salsa. Simmer for about 15 minutes… and your rice should be about done… and supper is ready!
If you truly want this dish to be worthy of “slappin your momma cause its so good” while you are cooking the okra you can cut up a few links of smoked sausage and brown it really well, set the sausage aside and add it when you add the rest of the vegetables…
If you need instructions past this… I can’t help you… It is a cryin shame if you don’t know what to do with rice and sauteed vegetables!

Hey Jason! How are ya? Oyio, I’ll have to give this a try. I love to cook, but I have never done Okra. To be honest, I don’t even know if I have ever eaten okra. But I do love garlic and peppers. Take care my friend, hope and pray all is going good with you.

Garlic is good for your immune system too… The only negative effect that I can find is that It really amps up your breath!
Be sure to use a heavy skillet to cook the okra down. I use a black cast iron one.

I don’t know if this is your origin, but since I was a teen I have called onions zonion with a cajun pronunciation (silent Ns and sounding more like “zone yone” (silent Ns)).
Ya remember how a cajun says “cut the grass”?… Mow de lawn.

Love your blog. I too have cooked okra many a times though differntly. But the aroma of a well done Okra as the lady said in a heavy cast iron pan, sounds too tempting. I have turned into a vegetarian lately so I’d skip the sausage part.
